I am volunteering again in a remote (to me) classroom. This time in Georgia. I’ll be traveling to visit my students, so I’m not going to post a partial plan. Instead, I’m going to share the Grandmother’s Pound Cake I’m making for them. Two loaves–one for the afternoon class, one for the morning class. They will be raffled, with tickets being given to students for participation and engagement throughout the week.

Pork chops and chicken breasts and tenders are on sale this week.  I also have a hunk of pork roast from previously that I want to use on Sunday.

This week there isn’t an ad on Wednesday because it’s Independence Day.  So I’m looking mostly to my freezer.  Also, Office Depot double charged me for an expensive purchase and my bank says it won’t release my funds for “up to ten days” which is well past shopping day.  So I’m trying to be frugal.  I actually have a chunk of feta in my fridge and kalamatas in my pantry for the chicken on Sunday.  And breasts for the dinner Saturday (instead of the thighs Gina uses).  I won’t use the imported tomatoes though.

This week, nothing is a true sale price.  Beef roasts at $3.99/lb, while technically less expensive than usual are not exactly a bargain. So I’m living out of the freezer except for Fathers’ Day on Sunday when we’re having burgers at the request of the father of my younger children. These will be the store-made patties with stuff in them (probably cheese) and may be grilled if he wants to show off his prowess and weather permits.

Sausages are on sale (Italian and bratwurst) and so I’m buying. Also, a heads up. The week after this one, I’ll be out of town mostly, so there will be a gap as other people will be responsible for most of the meals. That means I’m not posting anything here.

Chicken pieces are on sale so smothered chicken is a winner.  Also some more comfort food. Ratatouille is a vegetable stew, so it’s really more hearty than its name suggests.

Beef roasts and various kinds of chicken are on sale at my store.  So I’m cutting up a roast into stew meat and also hoping to score some cheap brisket.  If not, I’ll use another roast in the borscht.  Lots of stew/soup-type things as we’re in the mood for comfort food.
