Chickens and chicken pieces are on sale this week.  So is ground beef.  Some of both are here, along with an amazing bean and bacon soup in the slow cooker that is belly-filling without kitchen-over-heating.  Oh, and back to more low-carb friendly stuff.  As Harvey recedes into history, so does its effects on the grocery supply.

This week, we’re living off what the store had, which was pretty amazing.  We’re using baby bellas for the Beef Bourguignon and name-brand (I forget which) lasagna noodles for the Lasagna Florentine. The only protein we bought was the beans for the Cowboy Stew and the chicken.  Otherwise, we were delving the freezer.  This means you may not have the exact meats we do.  Stew meat is stew meat and any chicken will work in the soup.  We had other meal ideas in mind but lack of ingredients kept us from them.  Also, you’ll notice a dearth of side dishes.  There were not a lot of veggies available.  There might be some fried cabbage as a side for something as I have some left over from last week.  We shall see.

TUESDAY 8/29 UPDATE: Since I don’t know what our Kroger will have available post-Harvey, I’m not planning anything until I get to the store.  This means my menu will go up Saturday rather than Wednesday as per usual.

We had a midweek trip for essentials today— baby wipes, paper towels, and the like. There was a 45-minute line to get in and no bread available. Not even frozen dough. Nor tortillas. So lots of home-made bread from scratch is in our future.  This trip showed me that we may not be able to be very picky about what we buy on Saturday.

Also, school and work are off for the week.  My bean-hating son has the food he would have eaten at school—sandwiches (this is what the bread would have been for—there has been none available since before Harvey).  Quick Beer Bread made with Shiner Strawberry Blonde is not a good sandwich option.

SATURDAY 8/26 UPDATE: Yes, we are in the area affected by Harvey. We have a gas stove/oven and should the power go out, slow cooker meals will be exchanged for stove meals (we’ll swap days ). Thus far that has not been an issue—we are close to an electrical substation.  We bought all of our groceries for the week Friday and have all the ingredients we need.  Note that my son will be home Monday and possibly other days as well, so the bean meals may be shifted toward the end of the week in actual fact, despite their place on the menu here.

Pork chops and chicken thighs/drumsticks are on sale. Plus my son starts school and has evening classes so he won’t be eating with us some nights.  Beans and mushrooms again.  🙂  Especially beans.

The big news for the week is my hot-dog and bell-pepper-hating daughter is going away for the weekend so we’re having chili cheese corn dog muffins. Yum. We’re also having take-and-bake pizza on Thursday but I put a meal in for you in case you don’t have that option. It’s what I would have made. I’m also breaking out the last of the corned beef I bought on sale in March and making that amazing soup from Skinnytaste and a pot pie from Betty Crocker with it.

Roast beef is on sale in the value pack, so some will come to the table and some to the freezer.  I still have chicken pieces from last week, too.  Kroger has a special coupon for the Chicken Patties of Speed ($3.99 a bag for up to five bags) so I’m probably stocking up on them as well.

This week, pork butt is on sale so I’m smoking one in the slow cooker again.  This time the leftovers will go into my own version of a bubble-up bake. Saturday I have training so my son will be cooking the EZ Alfredo, with chicken breasts from last week’s buy-one-get-one-free sale. That’s also where the breasts for Sunday’s soup will come from. Bratwurst, Italian sausage, and meatballs are also on sale.  Technically, the Crockpot Spaghetti and Meatballs calls for frozen, but I plan to cook some fresh, on-sale meatballs and use those.

Independence Day is one of my favorite holidays because there is no gifting involved.  Only fireworks. We’re celebrating with slow-paced food, including bratwurst, coleslaw, and a made-the-night-before mashed potato salad. My husband is taking the week off work and offered to smoke ribs on Thursday (weather permitting).  If the weather is bollixed, we’ll do clam chowder Thursday and ribs Friday.  On Saturday, we’re going to the Tidelands Hamfest (that’s ham radio, not cured pork) so dinner will be low stress then, too.

This week my husband is home Monday for the Memorial Day day of remembrance.  Tuesday evening, I interview for a volunteer teaching position.  I intend to eat on the road, but the people eating at home get to have the chicken patties of speed (which they can assemble themselves) and a salad.  Pork butt again this week, with the leftovers earmarked for a tamale pie in early June.

This week is Mother’s Day and my husband is taking me out for lunch (I’m the mother of his children) but I’m cooking dinner.  I get to pick and I’m picking pork chops, one of my favorite ways–braised in dark beer and barbecue sauce with a little steak seasoning.  Total yum.  And my favorite garlicky potatoes on the side.  Pork chops are on sale so we’re having them twice.  Some varieties of frozen fish are on sale, too–the picture is of tilapia so I’m planning on having that one day as well.  Monday we’ll be pressed for time, so out come the chicken patties of speed. 🙂  This time, done as pizzas.

This week, I have two job fairs to attend–Tuesday and Thursday.  So dinner those days will be quickish. I’m making the lasagna on Monday and refrigerating it.  Also, the pork butt I’m “smoking” on Friday is going to yield some shredded “barbecue” pork for recipes in addition to being served on buns with barbecue sauce (or in a bowl with coleslaw for me–I go bunless).  Watch for a recipe (from, I believe Betty Crocker) for a loaded casserole that features barbecued meat in the coming weeks.

This week, there are a few things.  First, for those who celebrate it, Easter is on Sunday.  We are donating blood that day.  We’re having lunch at a restaurant and going to the blood center.  Then we’re having a hearty dinner of Corned Beef and Cabbage Soup.  Monday, we’re not eating at home, but I put something on the menu for those of you cooking along.  While we’re donating blood, there will be two slow cookers of chicken cooking as chicken breasts are on sale.  One will be cut-up chicken breast for recipes that use cut-up pieces and the other will be whole, for recipes that use shredded chicken or that don’t care.   I’ll use the 6-quart and the 7-quart ones  The 6-quart for the pieces and the 7-quart for the wholes.   Tuesday, I’ll be out all day so I need something I can throw together in minutes.  And Wednesday will be hectic, but I’ll manage–I have a dinner-hour appointment but we’ll eat after. Saturday’s Reuben Chowder may have enough corned beef left over from Sunday’s soup–or not.  If not, I’ll buy from the deli with the following week’s groceries.
