This Mexican Cucumber and Carrot Salad is easy if you use the pre-cut carrot chips from the produce section. It calls for “baby” carrots but I prefer to use the chips instead. Also, I double it because it’s tasty as leftovers. The cayenne is totally unnecessary as the idea is flavor, not heat. My son adds Sriracha to his anyway.
