I like summer squash with a bit of garlic and salt and pepper. It smells amazing as it cooks.
Sauteed Summer Squash
- 1 Tbsp EVOO
- 1 clove garlic, minced
- 2 zucchini, chopped
- 2 yellow squash, chopped
- salt and pepper to taste
- Heat oil in a large skillet on medium/low.
- Add garlic & cook for a minute.
- Add zucchini and squash.
- Cook on medium/low heat until veggies are just soft, about 8 to 10 minutes.
- Add salt and pepper to taste.
