Sauteed Summer Squash

I like summer squash with a bit of garlic and salt and pepper.  It smells amazing as it cooks.

Nutrition per portion

  • 1 Tbsp EVOO
  • 1 clove garlic, minced
  • 2 zucchini, chopped
  • 2 yellow squash, chopped
  • salt and pepper to taste
  1. Heat oil in a large skillet on medium/low.
  2. Add garlic & cook for a minute.
  3. Add zucchini and squash.
  4. Cook on medium/low heat until veggies are just soft, about 8 to 10 minutes.
  5. Add salt and pepper to taste.
